Tummy Yummies

Back in action today..although I'm not quite 100 percent. It is soooo cold and windy out! I was super comfy in my outfit today though. Just a simple dress stolen from my sister's old closet, a cardi that my aunt wore in high school, a scarf that used to be my mom's sweater, some shoes that I stole from my other sister's closet...hmmmm is there a theme here? Are all of my clothes stolen?! Oh well, I was cozy cozy and even had pockets to put all of my kleenexes...sigh....

Here are some yummies I baked yesterday. My hubby couldn't make it home with the weather so he stayed with a friend and I had all this time on my hands! So I baked 2 loaves of pumpkin bread, two loaves of banana bread, and a huge pan of apple/pear/cranberry crisp stuff-which is completely amazing. That's all I've eaten since last night-it is so good! And lots of fruit too ;) that's healthy right!?

Here's how I made the pumpkin bread, it makes 2 loaves:
Ingredients
• 3 cups all-purpose flour
• 2 cups white sugar
• 2 teaspoons baking soda
• 2 teaspoons pumpkin pie spice
• 1 teaspoon salt
• 1/2 teaspoon baking powder
• 2 cups pumpkin puree
• 2/3 cup vegetable oil
• 3 eggs, beaten
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.
2. Mix together flour, sugar, baking soda, pie spice, salt and baking powder. Add pumpkin, oil and eggs; mix well.
3. Pour into loaf pans and bake for 1 hour or until inserted toothpick comes out clean.
4. Allow to cool for 15 minutes before removing from pans.



The crisp was super easy. I just cut up some apples and pears, mixed them with some white sugar, a little flour, some cinnamon and the cranberries. Then I put a mixture of brown sugar, flour, cinnamon, oatmeal, and melted butter on the top and baked at 350 for an hour! Deeelish!
